Toys 4 Tots Bake Sale and Contest

Mayor John McMenamin, Councilwoman Kathleen Corbett, and Councilman Stan Rutkowski attended Coldwell Bankers bake sale and contest for Toys 4 Tots and it was a great success. They were able to raise $320.00 for Toys 4 Tots with donations and sales of their baked goods. The following are the recipes and the winners:


1. First Place: Linda Pingaro - Crumb Cake

Start with 1 Box of Butter Recipe Cake Mix (follow directions on box)

Grease 2 - 9 x 12 pans with Pam
Pour cake mix into the 2 pans
Bake 20 Minutes at 350 degrees
Take out of oven and put crumb topping on cakes

CRUMB TOPPING -

  • 6 Cups of Flour
  • 2 Cups of Sugar
  • 6 Teaspoons of Cinnamon
  • 6 Teaspoons of Vanilla
  • 6 Sticks of Butter Melted

Mix all ingredients for crumb topping and break it apart on top of cakes, then bake for another 15 minutes;cool and sprinkle with powdered sugar.

2. Second Place: Vickie Vitkuske - Baklava

  • 1 1/2 Cups of Sugar
  • 1 Teaspoon lemon juice
  • 3 Cups Chopped Walnuts
  • 1 Teaspoon Cinnamon
  • 1/8 Teaspoon Cloves
  • 1/8 Teaspoon Allspice
  • 1/2 Pound of unsalted Butter
  • 1/2 Cup Vegetable Shortening
  • 1 Pound of Phyllo Dough

Bring 1 1/4 Cup of Sugar and 1 Cup Water to a Boil;Stir often to dissolve;Boil for 10 minutes stir in lemon juice set aside;Mix Nuts and remaining 1/4 Cup of sugar and all of the spices together and set aside. Melt butter, shortening together;Unfold phyllo dough with damp towel;Brush the bottom of a 14 x 10 x 1 inch baking dish, put one layer of phyllo in pan then brush with butter;Repeat 6 times then a layer of nut mix than phyllo dough continue until finished.

Preheat oven at 325 degrees;Cut into about 2" diamonds or squares;pour remaining butter over top. Bake 35-45 Minutes;turn off oven;leave Baklava in oven for 10 minutes longer;Remove and place on rack and pour cooled syrup over entire top;Cool about 2 hours.HINT to make the cutting of the Baklava easier, freeze for 10 minutes.

3. Third Place - Frank Tenner - Decadent-Orange Brownies

  • 1/2 Cup boiling water
  • 6 Tablespoons natural unsweetened cocoa powder
  • 1 1/4 Cups (packed) Brown Sugar
  • 3/4 Cup all purpose flour
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 1 Cup Pecans, Toasted, Chopped
  • 2 Large Eggs
  • 10 Tablespoonsw (1 1/4 sticks) unsalted butter, melted, cooled
  • 1 Tablespoon orange Zest
  • 1/2 Teaspoon Vanilla Extract

Preheat oven to 350;Spray 9x9x2 metl baking pan with nonstick spray;Whisk boiling water and cocoa powder in small bowl to blend; Melt butter and let cool;Whisk brown sugar and next 4 ingredients in medium bowl to blend.Stir in pecans;Whisk eggs in large bowl;Add butter, orange zest, and vanilla;whisk to blend. Whisk cocoa mixture into egg mixture. Add flour mixture;stir just to blend. Pour into prepared pan.

Bake until tester inserted into center comes out with a few moist crumbs attached, about 30 minutes. Let cool completely in pan on rack. Cut ninto squares.
